Scalloped corn is a creamy, old-fashioned baked corn casserole made with sweet corn, milk, eggs, butter and crushed crackers. It bakes up soft and custard-like in the middle, with a lightly crisp cracker top.
Unlike cornbread casseroles, our scalloped corn is not bready. It is spoonable and the sweet corn flavor stays the star thanks to a little butter and sugar.

What crackers are best for scalloped corn?
Use crushed saltine crackers for a classic, lightly salty scalloped corn. Ritz crackers are great for a more buttery top. My mom always used saltines since that’s what we had in the pantry.
Seasoned croutons work too if you want to add a little extra flavor. You’d need about 2/3 cup of crushed crumbs for this recipe.

I was looking through my recipe box as we were cleaning out our kitchen last week and stumbled across my mom’s scalloped corn recipe. This is the corn casserole I grew up on.
This recipe I had just scribbled on scrap paper, right next to my tomato soup cake. It didn’t even have a name, but I knew as soon as I looked at it what it was. This easy scalloped corn is quick and makes a great side dish for holidays such as Easter, Christmas, Thanksgiving, or just any week night with our pork steak.
Many dishes have the term “scalloped”, such as scalloped potatoes, and it generally refers to a dish baked in cream.
Our Jiffy corn casserole is one of our most popular recipes. This recipe doesn’t call for Jiffy mix, however. Instead, it uses saltine crackers to help give the casserole texture.

How do you make scalloped corn?
Whisk the eggs, then stir in the milk and crushed crackers. Add the drained corn, melted butter, sugar, salt, pepper and minced onion. Mix well, then pour into an 8×8″ baking pan. Bake at 350ºF for about 40 minutes, until the center is set and the top is golden brown.

Frequently Asked Questions
What is the difference between corn pudding and scalloped corn?
Both are baked corn casseroles, but corn pudding is softer and more custard-like, with no cracker topping.
Scalloped corn is a little firmer and is contains cracker crumbs.
Can I use frozen corn?
If you have frozen corn from your summer garden or just from the grocery store, you can use it in this recipe. Just be sure to thaw the corn and drain off any liquid before adding it to the casserole.
Can I make scalloped corn with cream corn?
Yes. Swap one can of whole kernel corn for a can of creamed corn if you’d like a softer, slightly sweeter casserole. Keep the second can of corn as whole kernels to protect some of the texture.
Can I make scalloped corn in advance?
Put the casserole together, then cover it and refrigerate for up to 48 hours. Remove the casserole from the fridge 1 hour before baking, then bake according to the recipe below.
Can I make scalloped corn in a crock pot?
Yes. Spray the inside of the slow cooker with cooking spray so the casserole doesn’t stick as much, or use slow cooker liners. Add the mixed ingredients and set the slow cooker to high and cook for 2-3 hours.
Watch if closely. I have 3 slow cookers and each one heats just a little differently. Check your scalloped corn often and make sure the sides aren’t getting too brown. If they are, turn the slow cooker to low for the remaining time. The casserole should be cooked to an internal temperature of 165º Fahrenheit since it contains eggs.

Ingredients
- 2 large eggs
- 1 cup 2% milk
- 2/3 cup crushed saltine cracker crumbs (or butter crackers)
- 2 cans whole kernel corn, drained (14.5 ounces each)
- 3 tablespoons salted butter (melted)
- 3/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon granulated sugar
- 1 tablespoon fresh grated onion
Instructions
- Preheat the oven to 350ºF. Spray an 8×8" baking dish with cooking spray.
- In a large bowl, whisk the eggs until they are broken up. Add the milk and crushed crackers. Mix well. 2 large eggs, 1 cup 2% milk, 2/3 cup crushed saltine cracker crumbs
- Add the drained corn, melted butter, salt, pepper, sugar and minced onion. Stir well. 2 cans whole kernel corn, drained, 3 tablespoons salted butter, ¾ teaspoon salt, ¼ teaspoon ground black pepper, 1 tablespoon granulated sugar, 1 tablespoon fresh grated onion
- Pour the mixture into the prepared pan. Bake for 40 minutes or until the center of the casserole is set and the top is lightly golden brown.

- Add a cup of shredded cheddar cheese to make cheesy corn casserole. Or just sprinkle cheese on the top
- Top the casserole with French fried onions before baking.
- Try using seasoned croutons instead of crackers.
- Add leftover ham to the casserole before baking.
- Feeding a holiday crowd? Double everything and bake in a 9×13 dish, adding about 10 to 15 minutes. Pull it when the center is set.
For a softer, sweeter casserole, swap one can of whole kernel corn for a can of creamed corn and keep the other as kernels. - Everyone likes just a little bit of a different amount of salt in their recipes. We found ourselves adding a touch of salt to the casserole as we ate it, but I decided to leave the amount in the recipe alone in case someone didn’t like as much salt.

Can I use whole milk?
Can you use fresh corn off the cob or must it be canned or frozen.
This is basically what my mom made when I was growing up. She’s been dead over 10 years, and I miss her cooking so much. I want to cook this for my daughters so they can experience the tastes of my childhood.
Maybe I missed it, but I didn’t see what size casserole dish to use. ????
