What Gives It That Signature Crunch
The magic is a simple sprinkle of sugar before baking.
Spread the batter in the pan, then sprinkle that reserved ยผ cup of plain granulated sugar evenly over the top. Donโt stir it in. As the cake bakes, the sugar draws up a little moisture, melts, and re-crystallizes into a thin sheet that shatters when you cut it. I use this same method with our blueberry cobbler, peach cobbler and apple cobbler.
A few things to remember:
- Use regular granulated sugar for the top, not powdered and not superfine. You want those crystals.
- A few drops of water give an even glossier look. I did this with the chocolate chip version of our cake since it didnโt have all the moisture of fruit. 1-2 tablespoons of hot water over the sugar before baking gives it a smoother, glossier look.
- Pull it at the right moment. The top should be crackly and lightly golden, and the very center should still jiggle just a touch. A toothpick comes out with moist crumbs, not wet batter.
- Serve it soon. The crunch is at its best the day itโs baked. It softens as it sits (still delicious), so if youโre making it ahead, know that the top wonโt keep that crunch too long.
The Basic Sugar Crunch Cake Formula (Use Almost Any Fruit)
Once you know the base, you can make a sugar crunch cake out of whateverโs in season. Every flavor below starts from this exact ratio:
- ยฝ cup salted butter, softened
- 1ยผ cups granulated sugar, divided (1 cup for the batter, ยผ cup for the top)
- 2 large eggs
- 1 teaspoon vanilla (or swap in citrus zest + juice)
- 1โ cups all-purpose flour
- 1ยผ teaspoons baking powder
- ยผ teaspoon salt
- ยฝ cup full-fat sour cream
- 2 cups fresh fruit
The method: cream the butter with 1 cup of the sugar until pale and fluffy (a full 5 minutes. Donโt rush it). Beat in the eggs one at a time, then the vanilla. Add the flour mixture alternately with the sour cream, beginning and ending with flour, mixing just until combined. Gently fold in 2 cups of fruit. Spread into a greased 9-inch round pan, sprinkle that last ยผ cup of sugar over the top, and bake at 350ยฐF for 35โ40 minutes.

Just about. Stick to roughly 2 cups of diced fruit and use the base formula above. Fresh gives the best texture, and juicier fruits do best cut small so they stay suspended.

A 9-inch round cake pan (a springform works great if you want to lift the whole cake out). Smaller or deeper pans will need a longer bake.
Cover tightly and keep at room temperature for 1โ2 days, or refrigerate up to 5 days. It freezes well for up to 3 months, too. Just know the crackly top softens after freezing.

Two cups of fresh raspberries with a bright lemon twist. The trick here: press the lemon zest into the sugar first so the oils release. You get deep lemon flavor that way.

Two cups of dark sweet cherries, pitted and quartered. Quartering them (plus that thick sour cream batter) is what keeps the cherries suspended instead of sinking. A little almond extract in place of vanilla is lovely here.
